El Ingenio azucarero era una auténtica fábrica de considerable capacidad productiva para la época, se trataba de un elemento relevante.

Estaba formado por varias habitaciones que se comunicaban entre sí por enormes puertas. su techo no era muy alto.Cada habitación se destinaba a una determinada actividad. Así habían estancias para la molienda y el prensado, otras para la cocción, solidificación y enfriado y así sucesivamente. también había un salón donde se purgaba el azúcar.
